Today's bento is Pineapple Ginger Chicken,
(Thank you, Elizabeth for the yummy Recipe!)
French cut green beans fried in bacon and a cup of coconut juice.

Pineapple Ginger  CHICKEN INGREDIENTS:
  • 2 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • salt and pepper
  • 2 Tbsp. olive oil
  • orange chicken sauce (ingredients below)
  • toppings: orange zest
Pineapple Ginger SAUCE INGREDIENTS:
  • 1/4 cup sliced candied ginger
  • 1/2 cup pineapple juice
  • 1/2 cup honey
  • 1/3 cup coconut juice
  • 1/3 cup pickled pico de gallo
  • 3 Tbsp. cornstarch
  • 1 tsp. paprika
  • 1/2 tsp. white pepper
  • zest of one orange
  • pinch of crushed red pepper flakes
