Today we have a fruit salad of fresh honeydew melon and whole black cherries. In the 4 oz cup is apple juice and the main dish is savory Fiesta Chicken. Just take 4 fresh skinless chicken breasts, dice it up into bite sized pieces, add a cup of slivered celery, salt & pepper fry in a little olive oil and butter while liberally spiced with a Fiesta spice mix. (Read ingredients to make sure there isn’t any sugar, gluten or MSG in the mix). After chicken is cooked through, but still soft, add a can of Bush’s Fiesta beans. (The flavors mixed so well it might make a good soup base as well.) Stir easy so as not to squash the beans. Optional: add a heaping tablespoon of sour cream… emmmm… But remember if you are following the Knight Fit Diet, beans are considered as your one week cheat and the sour cream replaces your week’s yogurt. But its so totally worth it! Enjoy!
